Shuttered for the last four months, beloved neighborhood bakery Almondine opened its doors this week, much to the delight of DUMBO’s croissant connoisseurs.

Last October, Sandy’s stormwater wiped out pastry chef/owner Hervé Poussot’s entire kitchen – his ovens, refrigerators, and specialized equipment. The neighborhood rallied into action, raising more than $35,000 (with a little help from friends like Daniel Boulud, Eric Ripert and François Payard who pitched in for a pop-up pastry shop.)

It’ll be another week or two before the bakery is operating at 100%, but Hervé is optimistic. “My bakery may have been submerged but my spirits have been uplifted thanks to the tremendous support of the community,” he said. ”It has been a long, and at times demoralizing, journey to rebuild Almondine Bakery but my hope is for this to be our best year yet.”

Indeed, there’s never been a better time to stock up on pastries.
